  • Carrot Corn Chowder

    Got home late from work today, and had a quick snack to tide me over before dinner.  This snack reminded me of an hor’dourve that my parents used to serve at parties: triscuits, cream cheese, and salsa.  Yum!  But this is my healthy version:

     

     

    Cabaret crackers (not my first choice, but leftover from a dinner party we had), wedge of light laughing cow cheese, and blueberries on top!

      

    This was a surprisingly delicious snack.  Definitely a keeper.  Snack was 125 calories, 15g carbs, 6g fat, and 4g protein.

    On to dinner…more cleaning house!  I’ve had a whole row of Trader Joe soup starters staring at me for about 2 months now - luckily they last for like 8 months.  For 2 months, I’ve planned a meal using them at least twice a week and always changed my mind.  This time I followed through though!  I began with the Carrot Ginger Soup Starter and added the second half of a Seafood Medley pack from another recipe:

     

    Then I added a bunch of veggies: tomatoes, carrots, celery, and a last minute addition that really made the soup - corn!  I was kind of worried about the combo of seafood and carrots, but the corn really tied the soup all together.  I used my new favorite appliance - the immersion blender - for a few seconds at the end, which made it a little creamier.

    Dinner was 202 calories, 38g carbs, 2g fat, 12g protein.

    Yikes, low calorie dinner, but I’m feeling pretty full, so I may or may not have something sweet a little later - I’ll let you know.  Night all.
