  • Healthy Food…Taste So Good…

    Anyone?

    This lunch was so fresh, ripe, and healthy!  I loved it.  Meals like this one make me love my lifestyle.  To start off, I had a spinach salad with carrots, celery, kidney beans, and tomatoes.

    The kidney beans were leftover from a ED&BV recipe from a few weeks ago.  I have to be honest - I was a little nervous about these - I’ve never had them raw in a salad before.  But these were awesome, I really enjoyed them.  The dressing was made from a little bit of greek yogurt and some honey tarragon mustard.  I was never a big fan of dressings before, but the combo of yogurt and mustards is such a simple, easy way to add flavor to a salad without buying another product.  My fridge is jam packed as it is - I need to use what I have!  Glamour shot:

    On the side I had two mini pita’s with a wedge of Laughing Cow Light Garlic and Herb Cheese.  I always need some carbs to feel full, and I initially thought this combo wasn’t that inspired or special - but it was really tasty, so go figure.

    Plus, as you can see, I had 4 HUGE strawberries.  Oh my goodness these were amazing.  I was the one kid who didn’t like strawberries growing up, but I have developed such a huge taste for them now!  I’m so happy to have a huge container of these babies at home. :)

    All together:

    Lunch was 427 calories, 77g carbs, 3g fat, and 22g protein.

    I have to run an errand for this office this afternoon, so I get to be outside on this beautiful day!  I would LOVE to get an iced coffee, but after yesterday, it’s probably not a great idea.  What do you guys think?

    Fresh, ripe, and healthy - sounds like my kind of meal, for sure!

    If you feel like an iced coffee, then get an iced coffee - don’t deny yourself!

    True, denial isn’t in my repertoire. I just don’t want an angry stomach like yesterday!
