  • Nobody Better Lay a Finger…

    …on my Butterfinger! Yesterday Tina at Carrots and Cake made Almond Joy Oatmeal. It looked amazing! That got me thinking - what other types of candy bar inspired oatmeal concoctions could be made? Butterfinger was the first idea to cross my mind. It was always my favorite candy bar growing up but - come to think of it, I haven’t actually had one in years! Anyway, so here is my recipe for Butterfinger Muesli:

    • 1/2c oatmeal
    • 1/4c nonfat milk
    • 1/2c nonfat vanilla yogurt
    • 2 oz unsweetened almond milk
    • 1 tbsp peanut butter mixed in (For normal oatmeal, I usually use the peanut butter on the spoon method, so you can get a little pb in each bite. But for this, when I wanted a pb infused concoction, where the smell and look was just as important, I feel that mixed in is the way to go)
    • vanilla extract
    • almond extract
    • 1 tbsp flax
    • 1/8c chocolate chips
    • And for the crispety crunch topping, 1 tbsp ground almonds

    Mix ingredients. Store in fridge overnight. Makes 1.

    Maybe I’m just Muesli-crazy these days, but I loved, loved, loved this combo! It really did taste like a Butterfinger bar. Again, this could be made on the stove as hot oatmeal, where the chocolate would melt a bit, yum! But making it as muesli gave it a dreamy creaminess.

    This was soooo tasty. You could smell and taste the pb in every bite, and the ground almonds were fun to eat. Breakfast was 541 calories, 67g carbs, 25g fat, and 21g protein.

    I skipped my Pilates class this morning because I had to be at the office early for a meeting, so I’ll make that class up on Tuesday. I’m not sure when I’ll make it to the gym today - I have to go uptown to my apartment after work to clean up because I have a guest staying there this weekend, and I’m supposed to have drinks with a friend tonight too. I’ll either have to rush or rearrange some things. Have a great day everyone!

    Thanks Kath! You could leave out the almond extract, no problem. The container is still on my desk, and I keep leaning over to smell it! haha, it was delicious.

    VG - Thanks! Decadent and delicious is right! I usually don’t have chocolate in my oatmeal, but this was too good not to make!
