This lunch was inspired by a picnic sandwich my friend Gillian made for Opera in Central Park last year. Gillian, who is currently teaching abroad in China (Miss you Gil!) made a sandwich consisting of a sandwich roll, goat cheese, all types of grilled veggies and cream cheese. SOOO delicious. I made her recipe exactly for P and I to eat during the Halloween Parade, which we did, and they were awesome. This time around I wanted to switch it up using the items I had in house. I used a whole wheat tortilla, grilled summer squash from my salad last night, spinach and a Laughing Cow Light Original Swiss wedge:
I was going to do the goat cheese/cream cheese combo, but it seemed like such a hassle when I had the perfectly portioned Laughing Cow wedge right in front of me. This was delicious!! I love these tortilla wraps - so doughy and filling! This was super simple and super good - the best kind of meal. On the side I had 1/2c cottage cheese, and 1/4c Ezekiel Cereal:
This wasn’t as great as I was expecting. I think the cereal needed to be sweeter in order to mix the sweet/salty taste with the cottage cheese. I think this cereal should best be eaten with hemp milk. Expect that experiment in the future!
All together:
Lunch was 388 calories, 55g carbs, 9g fat, and 27g protein. Not surprisingly, seeing as how this is a way smaller lunch than usual, I’m NOT full and I may need to have a snack again this afternoon. I also see an iced coffee in my future… ![]()

Becca - I’m not great at ‘wrapping’ wraps either. I guess I get too small tortillas or I want to stuff too much stuff in there. I actually had to take out a bunch of summer squash for this guy.
