  • Pink Pants!

Did I mention that I’m wearing pink pants today?  I think everything is better on a day you’re wearing pink pants. :)
I grabbed coffee with my coworker so I could eat lunch at my desk while I took care of a few things.  I got an eggplant, mozzarella, and basil wrap from Guy and Gallard:

This was soooo good!  I also had a cup nonfat cottage cheese with street blueberries:

    Delicious!  All together:

Really good, but filling!!  I feel completely satisfied and FULL.  Lunch was 593 calories, 66g carbs, 17g fat, and 46g protein! (To be safe, I’ve assumed this is whole fat mozzarella - better to err on the side of caution!)

Now on to an afternoon of work… :P

I love blueberries and cottage cheese! It looks SO good, too bad I don’t have any blueberries!

Monica - what about strawberries? or peaches? my fave combo is pineapple and cottage cheese. any sort of soft fruit would be good!

VG - I love your daily support! :) You’re the best!

Oatmeal - Bright colors really do put you in a good mood don’t they?

Becca - It was great! Eggplant makes for very dense and filling dishes in my opinion.

Rose - Try it! The salty/sweet combo is the best, like chocolate and pretzels - but healthier! :)
