Hey all! I’ve been getting tons of great news this morning, the most important of which is from my doctor’s office, who said that my surgery is this close to being approved by my insurance company. YAY!!! I have been dreading and delaying this surgery for close to 10 yrs now - I’m finally willing and ready to get it over with. It’s scheduled for June 9th and it still hasn’t been approved. Hopefully soon I’ll get the news that it’s been approved and I can start my pre-operation to-do’s: blood test, book temp for office, clean house, buy easily swallowed food, etc.
I also got an email from a CSA reminding me about the first pick-up scheduled for June 5th: next THURSDAY!! Peter and I signed up for the CSA months ago, and I’m ready to see the fruits of that labor! Pun intended. ![]()
I did end up having a coffee this morning - I was still in sleep mode and needed to wake up! Around 1 PM, I settled in for lunch. Lunch was delicious and FILLING today. I started off with a chickpea cutlet on Ezekiel bread with a Laughing Cow wedge and spinach:
Along with a cup of nonfat cottage cheese and about 10 strawberries:
I am totally on a cottage cheese kick these days! I can’t get enough of this stuff!
Lunch was 621 calories, 70g carbs, 11g fat, and 60g protein.
This afternoon the plan is to go home, TACKLE the dishes, and hit up the gym before dinner. Have a great afternoon everyone!

Best of luck with that upcoming surgery; enjoy your CSA bounty when it arrives; and keep having a great Wednesday!! You’re on a roll!! :0D
Lunch looks great! I need to make these cutlets!
Congrats on getting your surgery approved!
I’m completely crazy for cottage cheese too. I could eat it multiple times a day. Sometimes I do.
Congrats on the surgery, but if you don’t mind me asking, what exactly is it for? You may have mentioned it before and I missed it.
Congrats on getting approved for surgery! I’m glad you’re having a good-news day
I also commend you for being able to eat cottage cheese. I wanted to like it so I tried it a few weeks ago and thought it was really horrible. I really wished I liked it though for the health benefits.
Congrats! That is a relief that your surgery was approved! I love cottage cheese with fruit!! My favorite is with pears, but I’ll eat it with anything!
Congrats on the approval! What is your surgery for and what is CSA?
I must tell you that i absolutely LOVE LOVE your blog! Its so inspirational and as a NYC girl myself it gives me the strength to eat well through crazy days at the office!
Keep up the fab work

Thanks!!
Becca - They’re super easy - they intimidated me the first time, but they’re actually pretty low-key.
Kristie - I’m getting a septoplasty, turbinate reduction and my adenoids removed. Basically I’m getting a pretty intense nose job! I was born with a deviated septum, and it prevents me from breathing, sleeping, and exercising properly. This surgery is going to make every part of my life better - that’s why I’m so excited! In case you’re wondering, since all of this work is being done on the inside of my nose, it may or may not impact the outside of my nose. Your septum helps determine the shape of your nose, so depending on how my nose is shaped on the inside, when they change it, it may or may not look different. Honestly, I won’t know if it will look different until after they do the surgery. Kind of scary, right? But having a deviated septum negatively impacts my life so much that it’s worth the risk!
Ashley - Thanks dude! Sorry you don’t like cottage cheese, but maybe you will in the future. I never used to like it, then I loved it, then I could take it or leave it, and now I love it again. So you never know.
Monica - Thanks! CC and fruit is an amazing combo, although I’ve never really been into peaches. They’re a little mushy for my tastes.
Kenzie - Thank you, re: surgery! A CSA stands for ‘Community Supported Agriculture’. It means a local farm that distributes organic (as much as possible) and local fruits and veggies to member once a week or every two weeks. This is my first year doing a CSA - I’m so excited to try all new fruits and veggies! Thanks you so much for your sweet comments, re: the blog! Your feelings are exactly WHY I started a blog in the first place. So, thank you and keep enjoying city life!
