  • Dinner Mash Up

    My lunch today was basically a mash up of last night’s dinner. I made a wrap from the leftover tempeh and added some romaine and a Laughing Cow Wedge in a whole wheat tortilla:

    This was good (and I finally got a pretty good wrap shape), but I didn’t spread the cheese so evenly, so there was alot of flavor in some areas and none in others. Unfortunate. Then on the side, I had another serving of the spinach and strawberry salad:

    Even better after sitting overnight - I love wilted lettuce every once in a while. My dad only eats wilted iceberg lettuce salads - gross! But I am with him on the wilted-ness - it can be tasty. All together, lunch remix:

    Lunch was 604 calories, 71g carbs, 26g fat, and 24g protein.

    Even though it was a large lunch caloricly, I still don’t feel full. I’m eating two Adora disks and chugging water as we speak in order to get some satiety! Maybe some hot tea in a bit…

    Long afternoon of work ahead, then home and possibly to the gym (as long as I’m still feeling up to it!)

    All I can say is interesting lunch; we should try new things all the time.

    I agree with Veggie girl regarding her thoughts for strawberry-spinach salad.

    yum that wrap sounds yummy….because your tempeh looked fab last night! I want to try tempeh, but I’ve bee nervous. It does look yummy though.

    Oh man, I am such a weirdo (according to friends and family) because I Loooove throwing my salads in the microwave! But only if I have a mishmosh salad! WF Saladbar salads I A.L.W.A.Y.S. throw in the microwave, because I always throw in a plethora of different things and always throw in tons of shredded carrots (heated up=tons of sweetness and nice chew), bell peppers and sweet peppers, shredded squash and shredded zucchini, spinach leaves (don’t use romaine), tofus, asparagus, hearts of palm salads, roasted red peppers, etc and the flavors after being heated for 2-3 minutes are fantastic! Plus it’s so much easier on the tum tum and digestive region ;)

    OooooOoo, you know what we need to try? Grilled Romaine! I haven’t seen it on any of our blogs and I, personally, do not believe I have ever tried it, but have always found myself so fascinated by it! That’d be fun!

    Pat - Thanks, I agree, re: trying new things!

    Gliding calm - Definitely give tempeh a try - I was nervous too, but it’s definitely more non-vegetarian friendly than tofu, I think.

    Richelle - Fruit in greens is one of my favorite combos. I definitely recommend strawberries, raisins, apple, grapes, orange - basically anything!

    Julz - I bet a heated salad is awesome in the winter! Grilled romaine does sound good! I bet it brings out some awesome flavors.
