  • My Kind of Day

    Today had just been rockin’: super productive, super happy, super healthy. I got a salad from Cafe Europa again today - this time with more insides that made it alot more filling! This salad was spinach, chickpeas, carrots, tomatoes, corn, avocado, sprouts, and broccoli along with too much lemon herb dressing (fat free):

    I also had some fat free cottage cheese with raspberries:

    Yum. So delicious and fresh. Lunch was 544 calories, 68g carbs, 15g fat, and 41g protein.

    I feel really satisfied from this lunch. I think this will hold me over well til dinner - that seems to be my big problem these days. Have a great afternoon guys!

    Both salad and cottage cheese - raspberries looks yummy.

    I wish I could grab them out of the computer screen, lol!

    Lately I’ve been trying to watch my carbs and I’m surprised that this lunch has nearly 70 grams. Was the salad dressing sweet?

    Sally - Good luck with your carb counting. It’s recommended that a good part of your diet be carbs, so don’t restrict too much. Here was the carb breakdown for this lunch:

    Spinach - 2
    Sprouts - 0
    Corn - 10
    Broccoli - 2
    Tomatoes - 2
    Carrots - 3
    Avocados - 7
    Chickpeas - 18
    Raspberries - 16
    Cottage Cheese - 8
    = 68g

    Adds up fast, doesn’t it?
