  • Pressed for Lunch

    Hey all,

    My first intern interview went well - I have another in 20 min, so this will have to be quick!

    For lunch, I went back to the Europa Cafe and tried their pressed sandwich, called a Pressata. I got Eggplant Parmagiana, which was eggplant, mozzarella, tomatoes and basil. It was good. And filling. And a large sandwich for a pretty decent nutritional panel:

    Then I had a Stonyfield Yo Calcium in Wild Berry with blackberries. I forgot to take the pic until a few bites in, sorry! :)

    I’m trying to make this last for a while because afternoons are my snacking downfall these days. Lunch was 638 calories, 108g carbs, 12g fat, and 27g protein.

    This afternoon I’m picking up Week 3 of the CSA goodies! We’ve had a couple huge storms the past week, so it may not be the best load. Plus, I have a great dinner planned, so cooking that should be fun. Whoops, my interview’s here! Bye guys!

    That sandwich looks freaking amazing! Was it as delicious as it looks?

    Don’t worry about struggling a bit since you’ve been back to exercising, that’s how it was for me when I had to take a break from getting sick. It definitely will come back to you soon and it’s better to take it slow than to overdo it and then have to stop again.

    The sandwich looks and sounds excellent!

    Its hard getting back in the groove of exercising after being off for a bit, but it will come back to you in no time!
