  • Homemade Lunch

    I haven’t brought my lunch in a while - this was a treat to be able to pull out a free, nutritionally planned meal - saving time, energy, and money. Must do more often!

    I started off with some Annie’s Mac and Cheese with tuna fish - such a classic, old school combo. Reminds me of camp. :D

    On the side I had a salad full of CSA greens and broiled squash and broccoli. This needed something else - something crunchy or sweet. I have extras of this, so I’m going to adjust the recipe next time.

    I ate about 3/4ths of this. I wasn’t quite full, so had some Milton crackers as well:

    That did the trick. Lunch was about 528 calories, 56g carbs, 11g fat, and 23g protein.

    This afternoon I have to hit the grocery store, the bank, and the gym before my friend Rita comes over for a girl’s dinner at 8:30. Should be a busy afternoon!

    Kate, what about adding some dried cranberries and/or some slivered almonds to your salad? (Mmmm, and goat cheese sprinkled on top would be tasty, too.) Lunch looks great.

    Mac and cheese with tuna = awesome combo. And one I haven’t had in far too long. I MUST remember to make this soon!
