I was exausted last night but couldn’t get to sleep - grr, I hate that. I ended up sleeping through my workout to make up the lost hours, boo. I tried a new twist on an old favorite today: Lemon Banana Meusli:
1/2c oatmeal
1/2c nonfat vanilla yogurt
1 medium banana, sliced
1 tbsp flax
2 oz vanilla soy milk
vanilla extract
lemon extract
lemon juice
YUM! I am loving lemon these days - such a fresh flavor.
Breakfast was 404 calories, 77g carbs, 7g fat, and 15g protein.

I have a quick question about muesli, if you’re letting it sit overnight do you add the yogurt/milk in the evening or in the morning right before you eat it?
Ahh, so sorry that you didn’t get a good nights’ rest :0( But hey, who wants to sleep when you can enjoy that Lemon-Banana Muesli?!?! Yum!! :0)
Trisha - Hi, thanks for commenting and reading WFWS! I add everything (oatmeal, flax, extracts, fruit, yogurt, milk) the night before and let it sit in the fridge overnight. I feel like the flavors get to mingle more.

Kate, I’ve been lurking around your blog for awhile and really enjoy it. You make me miss all my girlfriends in NYC!
I made muesli with lemon this morning, too. Last night I combined 1/2 cup oats with a cup of nonfat Kefir and a pinch of salt, then added some fresh lemon juice, a teeny pinch of sugar, and sliced strawberries this morning. Yum!

I do love Kefir, but I can’t quite incorporate it into my diet. Is it a snack, is it a drink - I don’t know!
