  • Smorgasboard Salad

    45 min later, I’m still eating this lunch - and I don’t think I’m going to be able to finish! It’s huge! But I needed to get started on this post, I have to hop into a meeting in 30 min.

    I felt like a big ol’ salad full of veggies today, so I hit up the Whole Foods salad bar. I started off with a huge bed of spinach, and then piled on the mini-salads:

    There’s a bit of everything in there: grains, beans, veggies - basically anything and everything that looked good!

    I also got some 0% Fage mixed with honey and two plums:

    I’m almost done with the Fage but I don’t know if I’m gonna be able to tackle the plums for a while.

    We had a setback with our mural project, so I have to go back to Home Depot for some supplies this afternoon. BOO.

    After work, I’m doing C25K 2.1 run (finally!) then getting cleaned up and going out to dinner with Jaclyn and Lauren, two readers who are fellow NYCers. We’re going to Life Cafe. What would you get?

    Your salad looks delish. I hope you enjoyed it. I know I’m late on this because I have seen you mention it several time in previous posts, but what is a C25K 2.1 run?

    Yum-that salad looks good…and filling!
    As for Life Cafe…I’m thinking the falafel dishes look good (sandwich or plate) and so does the penne pasta! The capresse sandwich sounds good, too! I’m sure whatever you pick will be yummy!

    Mixed Vegetables and Tofu stir-fried cabbage, baby bok choy, mushrooms, scallions, snow peas, carrots & organic brown rice - that sounds really tasty!

    Pan-seared Salmon oven-dried tomatoes, artichoke hearts and thyme butter sauce, steamed yucca and sautéed spinach - Mmmmm!!! Protein source and omega-3!

    Stir-fried Shrimp with eggplant and corlander over organic brown rice

    Overall, they sound like they have a tasty menu! Have fun!!

    BEAUTIFUL salad!! WF Salads, mmmm <3

    I would probably get the Life Salad but without the Tahini Dressing… That dressing sounds so icky to me, but maybe that’s bc I’m the only person that I’ve ever known of to dislike Annie’s G-ddess Dressing. Heavy dressings/dressings at all always seem to overpower all of the different components/layers of the salad! Boo to that! I find that even something as simple as some freshly squeezed lemon juice or some orange zest can do WONDERS for a salad! Anyways, that’s probably what I would order! But you have so many choices :)

    I would get Thai Chicken/Shrimp lettuce wraps AND PEANUT BUTTER PIE!!!! YUMMY!!!!!!! You only live once right?!?!

    I love that salad. I want that salad. I want Whole Foods. I am not going to stop complaining about the fact that I have no access to a Whole Foods until they open one near me. Hello Canada, jump on the Whole Foods bandwagon please!

    As for the restaurant, are you kidding me?! Their selection is amazing. It’s a good thing their menu is online so you can take a look at it pre restaurant visit because I think it would probably take me a good hour to narrow it down to just one choice of meal.
