Hey guys,
Since my lunch was at 4 PM today, I didn’t really need a snack - seeing as how our dinner was at 8. Like I said earlier, I had happy hour drinks scheduled but they had to be moved to a later date. So I was free for the afternoon! I planned to go home and start packing. I got all the way to my apt and dug in my huge, heavy bag for my keys - and nothing. No keys! I had forgotten them on the couch! Grrr. It was already 6:30 by that time so I just decided to kill some time around town. I looked around in a few stores (including Barnes and Noble, love) before heading into Pier 1. I found these cute little blue and white dishes and picked up a whole bunch. Before I knew it, it was time to meet up with the girls.
At Gusto, I saved two of the dishes for myself and laid out the rest for the ladies to choose two each:

For an appetizer, the four of us decided to split the spinach/strawberry salad for two and the margarita pizza for two - perfect portions for four!

For an entree, I got a make-your-own pasta with whole wheat penne, broccoli and oil - I added chicken for protein:
It was amazingly delicious - all the food was! I ate it all. Yum!
I had another splash of wine, but I didn’t even finish half of this:
I made the very mature decision to buy pass the beautiful organic deserts because I knew the ice cream bars in my freezer would be hard to resist. I was right:
Now I’m off to attempt packing - argh! Mandatory morning workout - tomorrow evening will be too nutso. Night guys!










Man, if i had forgotten my keys i would have been pissed! i’m glad you were able to find things to do to pass the time before your dinner and getting back into your place.

Wow, that looks like one great dinner. I love the looks of that appetizer pizza, so fresh looking and cheesy.
Also glad to hear the second nutritionist appointment went well and it seems as though she was able to offer you some pretty useful pointers!
Kate, I love your blog (!!!!) but if you’re eating chicken and turkey and fish and dairy and egg products wouldn’t it be more accurate to say you’re a vegetarian enthusiast. I know that it is highly offensive to true vegans out there to say that. Please don’t be offended, but it seems that unless you’re willing to make the full commitment you shouldn’t take the title.

Thanks again for the dishes! I had a great time last night, and I’m looking forward to doing it again. Glad you enjoyed your ice cream bar. I stopped for some peanut butter only 8 fro yo on my walk home-yummy!

Anonymous - I’m glad you like the blog - thank you! Re: my title of ‘vegan enthusiast’ I speak to this a little in the ‘About Me’ section, but I am, very plainly, enthusiastic about veganism. I cook from vegan cookbooks, read vegan blogs, eat at many vegan restaurants. I love the creativity vegans put into their food - dishes are always inspired. However, the blog really doesn’t focus about my vegan enthusiasm, it really focuses on my weight loss goals. So maybe a subtitle change is in order.
