I’m only a novice in the kitchen, but here are some of my better recipes:
Oatmeal Zucchini Muffins
- 1/2c old fashioned oatmeal
- 1/2c quick oats
- 1c whole wheat flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 cup sugar
- 1 cup shredded zucchini, packed
- 1 tsp lemon extract
- 2 tbsp canola oil
- 1 egg
- 3/4 cup fat-free milk
- 1/3c raisins
- 1/4c chopped walnuts
Method:
Combine dry ingredients and wet ingredients in seperate bowls. Add wet to dry. Cook for 20 min at 400. Makes 12 regular muffins. (For mini muffins, cook at 400 for 15 min. Makes 24 mini muffins.)
