Today is Ms. Eva’s birthday.  Eva was my first great friend in NYC.  We lived together for a year (2007) and almost killed each other.  Now we’re just good friends (and the murder threats are down to a minimum).  Today, Eva turns 26.  Last year, for her 25th birthday, we decided she was Old.  Now she’s Older than Old.  Have a great day Eva – I love you!

I meant to wake up early for the gym this morning, because my afternoon is going to be jam-packed.  However, P woke me up when he came in at 1 AM, boo.  He had a 5 hour interview - weird finance people.  So I didn’t wake up in time for a workout this AM – which means I’ll have to take today as a rest day because I won’t have time this afternoon/tonight.

For breakfast this morning, I had a cup fiber 1, cup nonfat milk, and a banana.  This was the first morning I wasn’t excited about this combo – which means I’ve got to switch it up tomorrow!

Breakfast was 329 calories, 92g carbs, 3g fat, and 15g protein.

Today, I’m going to just do it at work.  Wish me luck!

Morning! Feeling good and strong today.  Plus wearing pink pants, which as we all know, makes for a better day.  I woke up this morning starving – and headed on auto-pilot to the pound cake.  I had a snack of 1/2 slice worth of crumbles (unpictured).  Snack was 103 calories, 14g carbs, 4g fat, and 2 g protein. I brought the cake to work, as promised, and I will be glad when it’s gone!

For breakfast, I had the ususal these days: cup fiber 1, cup milk, banana:

Breakfast was 297 calories, 85g carbs, 2g fat, and 14g protein.

Ahhh, feels so nice to be back in my routine! I went to bed at 10:30 PM last night – totally unheard of for me. I thought that I would spring out of bed at 7 AM for my workout, but my body had other ideas. I slept in til the usual time – whoops! I guess I needed it after such a crazy weekend. When I got to the office I made a simple breakfast of Fiber 1, milk, and a banana:

Yum, simple and delicious. Breakfast was 380 calories, 107g carbs, 3g fat, and 18g protein.

I’m starting to get a little nervous about my surgery. It’s exactly one week from today – it will be here before I know it! I have to get blood drawn this week in case I lose too much blood during the operation. :( No fun.

Hey all. Today is my last normal day before the craziness of this weekend starts. We have a bunch of different events to attend, so it’s going to be more action-packed than relaxing. I don’t know about you guys but I find such comfort in my daily routine. Especially since now the surgery is definitely on, the next couple weeks are going to be a little off kilter. I’m a little set in my ways in that special events ruffle my feathers. But then I tell myself, ‘get over it, grandma!’ :P

On a related side note, it’s nice to feel comfortable in my healthy living that I can take on a couple weird weeks with the confidence to do so healthfully. I know a couple special events aren’t going to trip me up!

I grabbed a banana on my way out the door this morning. P got these a few days ago but they were still a little too green. Today was the first day they were looking good. When I got to work I had my banana with a cup of Fiber 1 and a cup of fat free milk:

Yum. Simple, nutritious, and delicious. Breakfast was 313 calories, 89g carbs, 3g fat, and 14g protein.

Swoon, I feel so organized this morning!  I haven’t even done anything specific, but I got up when I wanted to, I packed all the stuff I’ll need for the day (including lunch), I got to work on time, I’m wearing a put together outfit.  I’m feeling pretty good this AM!  The only way I’d feel better is if I had a clean apt waiting for me.  Ah well, I’ll get to that soon.

There is a fruit drought at my house (P usually buys the fresh stuff, while I get the cooking items and staples), so no oatmeal this morning.  I did pick up a box of Fiber 1 and a banana on my way to work and had a bowl with about 3/4c hemp milk.

Yum! I think the combo of hemp milk and Fiber 1 is the best combo out there.  Try it!  Breakfast was 324 calories, 91g carbs, 4g fat, and 9g protein.

Hey guys! Whew, I’ve had a long evening in the kitchen! I decided to make two types of cookie for my recipients: “You Got Your Peanut Butter in My Chocolate” Cookies from ED&BV, and Chewy Raspberry Cookies from Veganomicon. I used the basic recipes, except I subbed Cashew Macadamia Butter for PB, and Blueberry Preserves for Raspberry Preserves. Here are all the cookies cooling:

PB on the left, Blueberry Chocolate on the right. I have to say, neither of the proportions were correct for me. The PB recipe was supposed to make 12, but I made 18! And the Blueberry Chocolate was supposed to make 12, but only made 10. Go figure. The PB batter was soooo delicate, though. It was impossible to scoop with a spoon! Luckily, before I met Peter, he had a jones for chocolate chip cookies one night and went to Bed, Bath, and Beyond where a saleswoman led him around buying the most random kitchen utensils, including this:

A batter scoop. The first time I saw this, I believe my exact words were, ‘Ah, you got taken for a ride.’ Well, I bite my tounge! This little baby saved these cookies! They would have been a crumbly disaster if not for this guy. Whew!

Two weird things about this baking experience: a) I’ve known for a long time that the best way to cook is to clean as you cook. You use something, you put it away, you use something, you put it away. But I’ve never actually had the maturity to do this. Well, tonight I was positively rigid about it – the kitchen was sparkling the entire time I baked! I even stopped in the middle to sweep. Bizarre…and even more bizarre… 2) I didn’t nibble at the batter AT. ALL. Not once. I knew it was delicious, but I knew it wasn’t for me. So I just didn’t eat it…weird.

Anyway, I’m going to give some of each to Ira and Martha; and also to my friend Ian’s (Hi Ian!!) girlfriend who is a student at the Bumble and Bumble Academy and will be giving me a haircut for free tomorrow as part of her class. Score! I took a ‘before’ picture tonight, so I’ll show you guys the finished product tomorrow!

For dinner, I wasn’t really that hungry (mostly I’m just tired) so I had a TJ’ Chicken Sausage on an Ezekiel Bread ‘Roll’ with about 20g of kale chips.

Well, after I did the math, I realized I was about 200 cals short for the minimum of my calorie range, so I needed more. I made a little parfait: 105g nonfat vanilla yogurt, 67g blueberries, 85g strawberries, and 12g Fiber 1.

Dinner was 347 calories, 56g carbs, 7g fat, and 21g protein.

I feel really proud of myself today. I feel like I made really responsible choices for my life and body. Night all!

Tonight’s dinner was beyond delicious! There was a very silent 20 minutes where P and I both were engulfed in our food. But I’m getting ahead of myself…

I got home this afternoon and finally tackled my kitchen. I cannot wait until I have a dishwasher in my apartment – washing the same dishes several times a day is the most frustrating thing! Anyway, after that I was starving, so I had a Cocoa Banana Scone:

Around 45 minutes later, I was still starving – so I hit up the Fiber 1 and almond milk.

That did the trick – I was totally satisfied. I don’t take having a second snack lightly – I thought about my hunger for a long time before I decided on it. I analyzed it: am I thirsty? am I bored? am I tired? I finally decided that I was genuinely hungry, so I had my snack guilt-free. Snack was 208 calories, 50g carbs, 6g fat, 5g protein.

So on to dinner. This recipe was the inspiration for tonight’s meal. I switched out pecans for almonds and used regular milk with a little Greek yogurt instead of buttermilk. I also made homemade bread crumbs from a slice of Ezekiel bread. I like doing that because, again I don’t have to buy an additional product, plus I know exactly what is in the crumbs. Also I think it tastes fresher. So here was the finished product:

Yuuuuum. For the asparagus, I tossed these monster guys in a Ziploc bag with some balsamic vinegar, pepper, salt, and olive oil. Then I steamed them for about 5 minutes. These were amazingly fresh and delicious – so tender. Definitely the best method I’ve used to make asparagus.

All together:

Dinner was 244 calories, 18g carbs, 9g fat, and 28g protein. Delicious, delicious, delicious. Low calorie for sure, but you could punch it up with some sort of grain on the side. We weren’t very hungry tonight, especially with my double snack this afternoon. Pluuuuus…

P wanted to make sure I had room for dessert! He always wants me to have dessert for some reason… I had one chocolate from the box. :)

Dessert was 77 calories, 9g carbs, 5g fat, and 1g protein.

Night everyone!

I originally set my weight loss goal for 40 lbs. Since then I’ve upped my total weight loss goal to 50 lbs. For my original halfway point of 20 lbs, I had planned for a massage at the Mandarin Oriental. P and I went there for massages on Valentine’s Day this year and it was amazing. So, since 20 lbs is no longer my halfway point, I’m postponing my massage till I hit 25 lbs lost. But I still wanted to do a little something nice for myself for 20 lbs down. Enter Banana Republic. On my way home from work, I got this brown skirt that I LOVE that looks amazing on me (or so says the salesperson :P ). What’s more – it’s a close fitting style that I never thought I’d be able to wear. Truly a great moment for me. :)

Anyway, when I got home I was STARVING. I had a snack of Fiber 1 and almond milk. I poured the milk, and went to take the picture, and my batteries died. Grr. It takes 15 min for my batteries to charge and I didn’t want my cereal to get soggy, so no picture for snack today. Sorry guys! Snack was 143 calories, 50g carbs, 4g fat, and 6g protein.

Last night, P wanted to get Mexican food for Cinco De Mayo, but I had already eaten by the time he got home. So tonight, we both wanted Mexican. But I wanted to stay in and cook, and he wanted to go out. Didn’t take much convincing to go out, considering I have a sink full of dishes, as per usual. So we went to Mary Ann’s, a Mexican restaurant on the corner. I had a Rustic Quesadilla, which is described as a “Whole wheat tortilla stuffed with wild mushrooms, goat cheese, roasted corn, scallions, and melted jack cheese. Topped with guacamole and served with black beans.” Sound delicious? Well it was!

This picture makes it look a lot bigger than it was. I ate all of the quesadilla and black beans and none of the rice. It also came with guacamole, which wasn’t really worth it, so I passed on that. I’m estimating this dinner at 500 calories.

I’m planning on going to bed early so I can hit the gym tomorrow morning and then to work in my new skirt! I can’t wait to strut down 8th avenue. Have a great night!
