Morning all!  I was totally wiped out last night.  You know those nights when you sleep so hard that you forget that you’re sleeping?  Usually I have some consciousness that I know when I’m sleeping (does this sound weird?), but today there’s just a huge gap in time from last night to this morning.  Anyway, after a perfectly restful sleep, I got up and got going.  Work is completely empty today (everyone’s out at meetings and won’t be back til this afternoon) so I ate my breakfast in peace and quiet. :)   Definitely a calm entry into the day.

I made this muesli last night to sit in the fridge.  It contains:

1/2c nonfat vanilla yogurt

30 blueberries

1 tbsp flax

1/2c oatmeal

vanilla

cinnamon

I didn’t even arrange the blueberries like that!  When I opened the container they were just all lined up…weird.  Breakfast was 282 calories, 50g carbs, 5g fat, and 12g protein. Too low, whoops!  I hope this keeps me over until lunch… :/   I think I’ll have some coffee if I need to fill my stomach.  Have a great day everyone!

Morning all. All that walking around yesterday must have really conked me out because there was no way I was making the gym this morning! I made a new flavor of muesli last night, so I was excited to try it out this morning:

Banana Creme Muesli

1/2c oatmeal

2 oz hemp milk

1/2c nonfat vanilla yogurt

1 tbsp flax

121g banana

vanilla extract

Stir. Store overnight. Makes 1 serving.

This was great! I think whether bananas are good in muesli depends on their ripeness – they can’t be too ripe, or they get mushy and weird. Breakfast was 414 calories, 79g carbs, 7g fat, and 14g protein.

I’m having lunch with a colleague this afternoon, so I’m not sure what they will entail. Also, after work today, I’m going to check out Chelsea Piers. They’re going to give me a tour of the facilities and talk about membership. I’m so excited! Have a great day everyone!

Morning everyone! Well, my body said ‘No, thank you’ to an AM workout again this morning. I go back and forth between morning and afternoon workouts. Morning workouts do generally make me feel better during the day, but evening workouts help me sleep better – so they both have their benefits. The morning I tried a new muesli flavor – Red, White, and Blue Muesli:

  • 1/2c oatmeal
  • 1/4c nonfat milk
  • 1/4c hemp milk
  • 1 tbsp flax
  • strawberries and blueberries to taste

I was going to add vanilla, but forgot. Just as well, I don’t think this needed it:

Yum…creamy dreaminess. Breakfast was 367 calories, 62g carbs, 6g fat, and 17g protein.

Morning!  Another rushed morning where I didn’t have time to make it to the gym.  My friend from college, Whitney, is coming into the city for the weekend today.  She’s planning on moving here in the fall for grad school, so we’re going to look at a couple schools while she’s here.  Tonight I’m hoping on hitting the gym before going out with her and a few friends.

These monster strawberries that I got at Trader Joe’s have been the highlight of my lunches for the past few days, and my Butterfinger Muesli yesterday got me thinking about another great combo: Strawberry Shortcake! This was inspired by those old Good Humor bars with the crispy topping.  Yummmmm!

Strawberry Shortcake Muesli

1/2c oatmeal

1/2c nonfat vanilla yogurt

2 oz nonfat milk

2 oz unsweetened almond milk

almond extract

1 tbsp flax

1 tbsp ground almonds for crispy topping!

Yummm! I swear, I could eat my weight in muesli these days – I loooove it!  Breakfast was 382 calories, 63 carbs, 12g fat, and 20g protein. This was a smaller breakfast calorie-wise than I’ve had the past couple days so I hope this will keep me over til lunch.  Have a great day, guys!

…on my Butterfinger! Yesterday Tina at Carrots and Cake made Almond Joy Oatmeal. It looked amazing! That got me thinking – what other types of candy bar inspired oatmeal concoctions could be made? Butterfinger was the first idea to cross my mind. It was always my favorite candy bar growing up but – come to think of it, I haven’t actually had one in years! Anyway, so here is my recipe for Butterfinger Muesli:

  • 1/2c oatmeal
  • 1/4c nonfat milk
  • 1/2c nonfat vanilla yogurt
  • 2 oz unsweetened almond milk
  • 1 tbsp peanut butter mixed in (For normal oatmeal, I usually use the peanut butter on the spoon method, so you can get a little pb in each bite. But for this, when I wanted a pb infused concoction, where the smell and look was just as important, I feel that mixed in is the way to go)
  • vanilla extract
  • almond extract
  • 1 tbsp flax
  • 1/8c chocolate chips
  • And for the crispety crunch topping, 1 tbsp ground almonds

Mix ingredients. Store in fridge overnight. Makes 1.

Maybe I’m just Muesli-crazy these days, but I loved, loved, loved this combo! It really did taste like a Butterfinger bar. Again, this could be made on the stove as hot oatmeal, where the chocolate would melt a bit, yum! But making it as muesli gave it a dreamy creaminess.

This was soooo tasty. You could smell and taste the pb in every bite, and the ground almonds were fun to eat. Breakfast was 541 calories, 67g carbs, 25g fat, and 21g protein.

I skipped my Pilates class this morning because I had to be at the office early for a meeting, so I’ll make that class up on Tuesday. I’m not sure when I’ll make it to the gym today – I have to go uptown to my apartment after work to clean up because I have a guest staying there this weekend, and I’m supposed to have drinks with a friend tonight too. I’ll either have to rush or rearrange some things. Have a great day everyone!

So yesterday I bought myself a celebratory skirt and was asked by Miss Julz for pictures. Here we go. I had P try to take some pictures before work, but after the 5th shot, he kept saying things about ‘having to go to work’, ‘being late already’ and how he’s ‘not my personal photo studio’. I also think there was some mention of ’smiling with your eyes’ in there. I make that boy watch way too much ANTM. Anywho, I ended up taking some shots myself, so sorry for the emotastic mirror shot (also please ignore my messy apartment, and my embarrassingly huge stack of magazines).

Moving forward, this morning I sprung out of bed (woo hoo!) and hit the gym for some elliptical.  Before I left I had a piece of Ezekiel 4:9 Cinnamon Raisin Bread and a tbsp of PB:

Pre Workout Snack was 175 calories, 21g carbs, 9g fat, and 7g protein.

I did a 35 minute session, plus walks there and back.  Elliptical plus walk=441 calories burned.

Since discovering my new loves: coconut and muesli, I’ve wanted to combine them in crazy ways.  Today I tried Tropical Muesli, which was 1/2c oatmeal, 1/2c nonfat vanilla yogurt, 1/4c coconut, 1/2 cup papaya, 1/4c almond milk, 1/4c nonfat milk, cinnamon, and vanilla (forgot the flax again, grr!).

This actually wasn’t that great, boo.  The papaya just wasn’t doing it for me.  I think I finally did find the right balance between creamy and watery though.

Breakfast was 416 calories, 65g carbs, 13g fat, and 14g protein.

I woke up this morning around 6:30 ready to go to the gym, until I realized I had a splitting headache and tons of pain in my face.  I took some medication and went back to bed, hoping I’d be better by the time I had to get ready for work.  Well, I wasn’t and now I’m still in bed feeling lousy.  I’ve had chronic sinusitis since I was about 15, but it’s really gotten intense in the last year or two.  Luckily, I just have to hold on a little while longer – I’m getting a septoplasty on June 9th!  The surgery is going to clear up all these issues, and get rid of these chronic headaches and sinus aches.  Yay!

Anyway, I thought food might help me feel better, so I had some delicious carrot cake muesli:

 

I played with the  proportions this time to make it a bit less caloric: 1/2c oatmeal, 1/4c milk, 1/4c water, 66g carrots, 35g raisins, vanilla, and cinnamon.  I accidentally forgot the flax, whoops!  These proportions still aren’t right – last time was too creamy, this time it wasn’t creamy enough.  But it’s delicious either way.

Breakfast was 393 calories, 80g carbs, 3g fat, 14g protein.

I’m really not feeling that great, but I’m tempted to go to Trader Joe’s, because it will probably being empty – and an empty Trader Joe’s is like heaven.  Also, I would love to get to the gym.  But I should probably take it easy, I want to hit it hard tomorrow. 

Sorry for the late breakfast post – I had some meetings early this morning that kept me off the computer.  I started out the day with some old fashioned elliptical training!  My body and my head weren’t in agreement about this workout though.  My body felt strong, but my head was screaming, ‘I want to be done now!’  Argh.  I finished up my workout though, because I have dinner plans tonight and knew I would regret stopping.  I’m so glad I did!  I feel refreshed and accomplished for the new day.

I subscribe to www.podfitness.com, which gives you customable workouts synced with your Ipod.  It’s one of my favorite fitness tools.  I did 35 minutes on the elliptical trainer to the beats of some old school JT.

Elliptical and Walk was 475 calories burned.

This breakfast was a concoction of a bunch of different ideas floating around.  I knew I wanted to try muesli, and I’ve been searching for a way to get more delicious shredded coconut into my meals, hence…carrot cake muesli!

I added 1/2 cup oatmeal, 1/2 cup nonfat vanilla yogurt, 1/2 cup nonfat milk, 35g raisins, 124g carrots, 1/4 cup unsweetened shredded coconut, vanilla, cinnamon, and flax.  Tucked in the fridge overnight.  Oh my goodness this was amazing – it honestly tasted just like carrot cake.  I don’t think I would have liked this as much if it was hot – I really think the being slightly chilled made all the difference.  CarrotsnCake Tina, you’ve got to try this!

Not only was it delicious, but I really loved getting in some veggies as breakfast. Unexpected, but very cool.
Breakfast was a little more caloric than usual, but definitely worth it: 540 calories, 95g carbs, 12g fat, 19g protein.
