In the past, whenever I was home sick, I had a tendency to snack on comfort foods.  Today has been really successful on that front, however.  I haven’t been overeating, and I haven’t been eating garbage.  Between this and my performance at Saturday’s party, I’m really starting to feel secure in my healthy lifestyle.  It’s really a great feeling. 

I was a little hungry around 12, but not quite enough for lunch yet, so I snacked on a Cocoa Banana Scone:

 

Yum, delicious as ever.  Snack was 134 calories, 25g carbs, 4g fat, and 3g protein.

Around 1:30, I decided on lunch.  I used the last of my chickpea cutlets made from Veganomicon to make a chickpea sandwich, plus two slices of Ezekiel 4:9 Bread, spinach, and a wedge of Light Laughing Cow Herb and Garlic Cheese:

 

Along with my sandwich, I had a 1/2 cup cottage cheese and a half cup of a mixed fruit container that P picked up at the grocery store.

 

All together:

This lunch was so good.  I love some cottage cheese, and P picked up the 2% milkfat (I usually get fat free) – so this was quite a splurge!  Plus the combo of the chickpea cutlet and laughing cow was really tasty.  That was my last cutlet, so I’m going to have to make another batch.

Lunch was 548 calories, 65g carbs, 13g fat, and 43g protein.

Hey all!  Last night I totally conked out.  As soon as I laid down, I was o u t.  When I woke up this morning, I felt so refreshed!  I wasn’t that hungry though so I delayed breakfast to let my hunger build (plus P was still a lump in bed!).  After talking to my mom, answering emails, and blog checking, I started thinking about brunch around 11.  I couldn’t decide what I wanted to do – have normal oatmeal, create something new, order in or go out to brunch.  Even though I was tempted towards the latter two because I have aprox my entire kitchen in my sink to be washed, but after two days of eating out I knew I needed to get back into some routine.  So I decided on a new recipe to motivate me to clean the kitchen.  Enter one of my favorite new cookbooks, Eat, Drink, and Be Vegan.  I decided on a Cocoa Banana Muffins,  because I had all the ingredients on hand. :)

Even though this recipe was for muffins, I usually make my muffins into scones for two reasons: a) I don’t have a muffin pan and 2) the bigger scones make me feel like I’m getting more food!  These scones were delicious – they smelled like Cocoa Krispies!  These will make great desserts with a little bit of almond butter, or a great pre-workout snack.

I also had a little bit of milk with my chocolate-y goodness!

 

 

Breakfast was 441 calories, 80g carbs, 11g fat, and 12g protein.

Since it’s a lazy Sunday type of day and I didn’t make it to the gym yesterday, I may go for a leisurely session this afternoon.  Have a great day!
