Oh my goodness I am stuffed!! I did not intend to eat such a large lunch, it just kind of fell together. I went back to that little sandwich shop for round two. This time around I tried their salmon burger on whole wheat:

This was great! They put some sort of sauce on it (which wasn’t on the menu). I’m not sure what type of sauce it was, but I think it was tartar – wouldn’t have been my choice, but it was good with the lettuce and onions. I also picked up a little thing of grapes:

So now I am packed to the gills. Yum, yum, yum – it was all delicious. All together:

Lunch was 687 calories, 85g carbs, 22g fat, and 42g protein.

Most of my office has left already/is leaving soon – I hope I’ll get to too!!

Well I had another victory against the office goodies this afternoon, wahoo! It’s funny – for months they didn’t bother me, and now I’m back under their spell. Just goes to show you – weight loss is an ongoing battle! It definitely knows how to humble you. I also succeeded at the going away party! On the way there I had my pre workout snack: a new flavor of Luna Bar, Nutz Over Chocolate.

It was great! Luna is definitely my favorite type of bar. (Excuse my desperate need for a fresh manicure!) Pre Workout Snack was 180 calories, 24g carbs, 5g fat, and 10g protein.

At the bar I had my club soda and lime as planned. I didn’t miss a beat with the rest of my coworkers who were drinking and no one even noticed that I didn’t take a shot with the rest of the gang. Definitely a success!

Afterwards I headed over to CP to hit up some cardio. I really couldn’t keep focused on cardio today! I must have worked on every type of cardio machine – twice! Plus I ran the track and used free weights, did mat work – people must have thought I was crazy! After that I swam for a good 30 min. I loved it! Cardio Smorgas = 483 Calories Burned.

When I got home I made a quick dinner of smoked salmon, feta, tomatoes, capers, and spinach on a whole wheat tortilla.

I also had some frozen strawberries and frozen blueberries heated up over some 0% Fage with a little unsweetened coconut.

Dinner was 507 calories, 64g carbs, 17g fat, and 27g protein.

I’m really pleased with myself today – I did a good job meeting my goals! On my walk over to CP I noticed an exciting sign a few blocks from my apt:

If that’s not something sweet to dream about, I don’t know what is! Night!

After brunch this morning, Peter and I walked around the neighborhood to soak up some of this beautiful day. I managed to drag Peter into the kitchen supply store to pick up some new kitchen tools, yay!  I got a pair of tongs, a Y-peeler, and a mini-muffin pan!  To celebrate, I made Carrot-Pineapple-Sunshine Muffins from Veganomicon.  I followed the recipe basically, but I used hemp milk instead of soy milk, and lemon zest instead of orange zest.  This baking experience was much more normal, with bowl licking and messy kitchen. :) Muffins cooling:

For lunch/dinner, I had a smoked salmon, spinach, capers and Laughing Cow sandwich on Ezekiel Bread, along with one of three mini-muffins I ate during the baking/cooling process, and a small smoothie made from blueberries, banana, pineapple and nonfat vanilla yogurt.

Dinner was 717 calories, 118g carbs, 15g fat, and 31g protein.

P and I are off to a movie – we bought tickets online this time, so we should to be good to go!  Happy Saturday night everyone!

Not your typical combo, but this was my afternoon!  I went with some of the girls in my office to a nail salon a couple blocks down.  I was in desperate need of manicure/pedicure, and with a family event tomorrow, I knew it was now or never.  I got a nudeish pink color on my fingers called Hopelessly in Love, and a coral-reddish color on my toes called Ambush Red.  I always remember the names of the nail polishes I choose, because P likes to know. :)

So that was the beauty, now on to the fish!  Lunch today was a new combo, and it was totally delicious!  I used to think that I was happy eating the same old favorites over and over.  Now I realize that I am so much happier with some variety! – even though it takes a bit more work, it’s worth it.

Anyway, this salad contained salmon, feta, carrots, tomatoes, capers, and the last of a container of cottage cheese.  It was delicious!

 

 

This was my first real experiment with feta, and I think it went really well.  I definitely have a new favorite.  Along with my salad I had some fruit stolen from my company’s Friday Morning Breakfast.

 

 

In there is a medium banana, 2 huge strawberries, 1 huge piece of cantaloupe, and a little less than a cup of pineapple.  Truly delicious (and outrageous).
